Job Description
The Pastry Sous Chef is responsible for daily prep and execution of assigned courses during service. You report directly to Chef Peter Hemsley and the Executive Pastry Chef. The Pastry Sous Chef is an independent manager who answers to executive level superiors. They are to effectively manage CDPs and Commis in the pastry station when it comes to maintaining clean workspaces and quality of food preparation. This position helps to set the tone for our standards of practice.
Duties and Responsibilities (but not limited to)
- Carry out opening and closing duties such as sanitation set up, receiving produce, daily inventory, prep list creation, cook and dish steward supervision.
- Be knowledgeable on all the desserts and baked goods that are produced in house and assure the quality and consistency.
- Carry out production tasks in a timely manner.
- Set up pastry service station while maintaining correct pars and stocks to ensure a smooth service.
- Break down, restock and clean the pastry service station at the end of the night.
- Hands on production and well as strong plating skills with an ability to maintain calm under pressure.
- Be determined to deliver a detailed and high level of luxury service with high attention to detail.
- Must have a strong ability to take direction and constructive critique well.
- Have a strong sense of urgency and discipline.
- Ability to critically analyze a situation and think on your feet; be flexible as well as a good problem solver.
