We are seeking a talented and experienced Sous Chefs beautiful Danfords Hotel and Marina and Waterview at Port Jefferson Country Club in Port Jefferson, NY!
Our Sous Chefs will supervise & work / execute all food purchasing and preparation for events ensuring standards are maintained as set forth by management. They will report directly to the Executive Chef to coordinate, plan, and supervise the production and presentation of food served in the hotel’s effort to deliver outstanding guest service and financial profitability.
Essential Responsibilities:
- Provide professional and courteous service at all times. Maintain exceptional level of guest service.
- Manage and participate in daily culinary operations to include, but not limited to, preparation and production of meals, supervision of food quality and presentation, compliance with all safety and sanitation standards and regulations, team member productivity and performance, implementation of policies and procedures.
- Visually inspect, select, and use quality food and beverage products including, but not limited to, fruits, vegetables, meats, fish, and spices.
- Monitor and develop team member performance to include, but not limited to, providing supervision and professional development, scheduling, conducting counseling and assisting with evaluations, scheduling, and assigning work and delivering recognition and reward.
- Scheduling all associates under his/her supervision, maintaining adequate staffing levels while adhering to labor standards guidelines.
- Cooks and otherwise prepares food according to recipes. Ensures a variety of menu items offering local and seasonal specialties.
- Supervises all cooking operations, including methods, portioning, and garnishing. Ensure high level of food quality and consistency through training and direction to banquet associates.
- Ensures attractive presentation of all food and dishes. Keeps current with trends and styles of cooking and presentation. Keeps banquet menus updated at a level to surpass competitive facilities.
- Review all recipes regularly to ensure maximum profitability.
- Co-manages (with Executive Chef) physical maintenance of the kitchen/service areas and maintains standards.
- Requisitions food and equipment, giving specifications, quantities, and quality descriptions.
- Performs inventory and purchasing duties as required.
- Purchasing, receiving and storage of banquet food items. Receives and checks food and supplies for quality and quantity.
- Monitor and ensure compliance with federal, state, local and company health, safety, sanitation, and alcohol awareness standards.
- Prevents the spoiling and the contamination of foods by enforcing proper sanitation practices and ensuring compliance with hotel policy and health regulations.
- Work within budgeted guidelines for food and payroll. Assists in the developing the annual operating budget.
- Accommodates visitor’s requests for special food items.
- Conducts quarterly department meetings jointly with the Executive Chef.
- Attends weekly staff meetings.
- Completes projects as determined by the Management.
- All other duties as assigned.

- Proficient with Excel, Outlook, and other Microsoft Office software.

- Strong guest service attitude.
- A minimum of 1 year of Management experience working in a Hotel Restaurant, Lounge, Bar and Banquets
- Culinary degree is preferred.
- Ability to work nights, weekends and holidays as needed is required.
- The ability to lift up to 30 pounds.
