Oversee daily operations of a busy, revered, downtown Chicago, long-time family-owned restaurant.
Responsibilities include:
- Plan and direct food preparation and culinary activities in a scratch kitchen
- Butcher meats
- Create daily specials that mesh with existing menu
- Estimate food requirements and food/labor costs
- Order food supplies
- Supervise kitchen staff’s activities
- Arrange for equipment purchases and repairs
- Recruit and manage kitchen staff
- Rectify arising problems or complaints
- Give prepared plates the “final touch”
- Comply with nutrition and sanitation regulations and safety standards
- Monthly billing and cost analysis
- Maintain a positive and professional approach with coworkers and customers
