Who You Are:
The Chef de Partie is responsible for working the following stations in the kitchen: Wok or Saute station. The Chef de Partie should be an expert at their particular station while having a working knowledge of all stations in the kitchen, which include Garde Manger, Ceviche station, Plancha, and Fry station. They should be able to read and follow recipes and standards, train employees, and maintain health department, food quality, and restaurant standards.
The Chef de Partie is responsible for the supervision of their station in addition to being in direct contact with the Chef or Sous Chef for all instructions on the station such as, but not limited to, menu changes. The schedule required for this position is Thursday to Sunday evenings. Compensation is negotiable and starts at $16 per hour.
Essential Duties:
- Must be able to communicate clearly with managers and coworkers
- Keep production to the level required by the Executive Chef
- Maintain cleanliness and sanitation of work area and equipment throughout the shift following Health Department and restaurant standards
- Maintain and enforce the high level of food quality established by the Executive Chef
- Maintain and enforce the high standards established by the Executive Chef
- Keep waste to a minimum and discard spoiled food products from the station in accordance with company procedure
- Ability to perform all essential duties during a lengthy, high-volume, and high-pressure service.
- Must be able to adapt to service changes as instructed by the Chef or Sous Chef throughout the entire shift
Competencies & Qualifications:
- At least 2 years of experience in high volume or fine dining environment
- Advanced knife skills
- Ability to read and follow recipes and standards
- Ability to produce a high volume of work in a timely manner, which is accurate, complete, and of high quality
- Actively practice food safety procedures
- Organizational skills
- Effective time management
- Ability to lift large items to 50 pounds
What You’ll Do:
- Ensure high performance and maintain excellence & hospitality throughout each day’s specific service periods.
- Ensure consistent execution of food and timely flow of service by directing the team and effectively expediting service.
- Maintain a positive working relationship with Front of House leadership and line staff at all times
- Ensure that all recipes, products, food preparations, and food execution meet the restaurant's specifications and commitment to culinary excellence. To the highest degree possible, ensure that the kitchen is kept clean, safe, and up to a 100level health code standards.
- Ensure all team members are appropriately trained to execute station properly, partnering with the Executive Sous Chef team to make sure that all new hires are adequately trained before beginning their new role
What We Need From You:
- 2+ years of experience in culinary arts and casual-fine dining
- Certification in a Hospitality-related field, or equivalent (preferred, not required)
- Demonstrated experience in collaborating and communicating across teams
- Excellent food & beverage knowledge
- English fluency and additional languages are preferred, but not required
